What is it and How Does it Taste? Truffle Butter
Truffle butter is a staple in my refrigerator. It is a butter enriched with luxurious truffles, black or white varieties. For those of you who do not know, Truffles are a form of fungus resembling a lumpy mushroom or potato and are costly to purchase. Using a prepared truffle butter compound is a phenomenal way to experience the flavor of truffles in your recipes without the exorbitant cost.
I keep both white and black truffle butter on hand to enhance a variety of recipes. White truffles have been said to resemble the taste of shallots with a musky, earthy aroma and best used with shellfish, white fishes, chicken, and rabbit. The black truffle has an earthier flavor and scent. Both black or white truffle butter is used interchangeably as a matter of taste. I use either to enhance eggs, mashed potatoes, pasta, soups, vegetables, fish, and meat. Deglaze a pan with wine and add a tablespoon of truffle butter for a rich and flavorful sauce.
You can purchase truffle butter in the refrigerator section of most specialty supermarkets. I generally purchase the D’Artagnan brand; there are several others on the market as well. Savini Tartufi is a product of Italy, available on Amazon.com. It comes jarred and doesn’t need to be refrigerated until opened. Keep it handy, as it will soon become a regular item on your grocery list.
