Confetti Bean Dip

       CONFETTI BEAN DIP

 

I  tasted this delightful dip for the first time at a friends home. I must have looked gluttonous, as I could not stop eating it! The same thing happens to others when I make it at home for guests or, bring along as an appetizer to parties. Serve with “scoop style” corn chips. You will surely be asked for the recipe!

 

                                                                

                                              RECIPE

Ingredients:

One 15.5 ounce can black eyed peas

One 15.5 ounce can black beans

One 11 ounce can Shoepeg or white corn

1  small jar chopped pimentos

1 small can of jalapenos, chopped. Use  ½ if you don’t want it too hot, or omit

1 medium onion finely chopped

1 cup celery, finely chopped

 

Marinade:

1 cup of olive oil

½ cup of apple cider vinegar

½ cup of sugar

 

Directions:

In a small saucepan combine olive, cider vinegar, and heat to a boil. Heat until the sugar is dissolved. Add to bean mixture and refrigerate overnight. Pour off marinade and serve with corn chips.

 

Inspirations:

a.       Great as a side to chicken or fish.

b.      Perfect for bringing to a BBQ.
