 Fresh Figs with Mascarpone, Yogurt, Honey, and Pistachios

                                             Breakfast or Dessert? You Choose

Based on my observations, I have noticed that many of my friends and family are eating lighter these days. I am as well. When spending an overnight at someones home, I am very appreciative of the hospitable efforts taken to prepare a hearty breakfast consisting of bacon, eggs, and or pancakes. When your hosts are already pouring the batter, how do you kindly say, “we just don’t eat that heavy anymore, or, I’m not a breakfast person.” You don’t. You shut-up, eat and, feel overloaded and disgusting all day. This situation becomes worse if you are staying more than one night. On my blog, “Overnight Night Guest’s, with Breakfast Inspirations,” I share stories and recipes based upon experiences in my own home and while visiting others.

The recipe below is something I prepare with ease and have ready when my overnight guests wake up. I place this confection on the kitchen island with some spoons, juice, and coffee; then begin to access my second step.

 

                                   Fresh Figs with Mascarpone, Yogurt, Honey, and Pistachios

Serves: 4

Ingredients:

1 cup mascarpone cheese

1 cup Greek low-fat yogurt    

2 tablespoons of honey         

2 teaspoons fresh lemon juice

½ teaspoon lemon zest

1 teaspoon vanilla extract

1 pint of Figs, each fig cut into fours

½ cup chopped pistachios, toasted lightly for flavor, then chopped

Extra honey for drizzling

Directions:

Whip together the mascarpone, Greek yogurt, honey, lemon juice, lemon zest and, vanilla extract. Place the mixture in a decorative bowl and top with the sliced figs and chopped pistachios.  Drizzle an extra tablespoon of honey on top. This recipe can also be served individually in small dessert cups.

Inspirations:

a.       When Figs are not available, blueberries, strawberries, and peaches are options

b.       Orange rind and orange juice can replace the lemon and lemon juice

c.       Flavored Greek yogurt is an idea, just cut back on the honey.

d.       Save your small glass yogurt and honey jars to use as decorative serving cups
