Arugula Waldorf Salad
With Honey Apple Cider Dressing
This salad is a combination of sweet and savory flavors. The “dressing” is fantastic when applied on all salads, especially with those that contain fruit and nuts.
Serves 4
Ingredients:
4 cups of baby arugula
½ cup diced celery
2 granny smith apples, cored and thinly sliced
1 cup grapes, cut in half
½ cup candied walnuts
Dressing:
¼ cup of honey
3 tablespoons olive oil
2 tablespoons apple cider vinegar
¼ teaspoon ground cinnamon
1 garlic clove, pressed
Directions:
Whisk together the honey, olive oil, cider vinegar, cinnamon, and garlic in a mixing bowl until well blended. In a large salad bowl, add the baby Arugula, celery, apples, grapes, and walnuts. Coat with the dressing and toss.
