While visiting family in Italy, we chose to stay at a B&B on the outskirts of the Amalfi Coast. Upon our arrival at Villa Le Favole, in S. Egidio Monte Albino, we were greeted by the innkeepersCorinna and her husband, Salvatore. As wee sip homemaker Limoncello, we tour this charming and beautifully maintained inn. Salvatore, an architect by trade, designed the renovations. Villa Le Favole looks like a small castle on the outside with modern finishes on the interior. Just as beautiful as it appeared online!

Each morning breakfast was served buffet style with plenty of fruit, yogurt, cereal, and eggs. Simple and fresh. Corinna baked a moist and flavorful fresh peach loaf on the morning of our departure. I couldn’t stop eating it and devoured half the cake. I sheepishly asked Corinna if she would share the recipe with me to publish on my website, for my readers. She replied, “Of course, that’s what recipes are for!”

Aside from the taste, I like the fact that this cake isn’t overly sweet and contains moderately healthy ingredients ! It’s very simple to make.

Fresh Peach Cake

 

Ingredients:

 

3 eggs, beaten

3 fresh peaches, peeled and diced in small pieces (about 1 ½ cups)

1 cup of sugar

1 cup of peach yogurt  (plain or vanilla is ok)

1 cup of orange juice

1 cup of sunflower oil (or other neutral oil)

1 tablespoon of vanilla

2 teaspoons baking powder

2 1/2 cups of flour

 

Directions: 

 

Preheat oven to 350 degrees

In a bowl whisk together eggs, sugar, yogurt, juice, oil, and vanilla.

In another bowl, whisk together flour and baking powder.

Add wet ingredients to this mixture and blend with a spoon.

Add diced peaches and mix thoroughly.

Grease and flour a 10 ½ by 5 ½ loaf pan. Pour cake mixture into the pan.

Bake for 60 minutes or until an inserted toothpick comes out clean.

Dust the cooled cake with confectionary sugar.

 

Inspirations:

a.       Serve with fresh whipped cream or ice cream.

b.       Great for breakfast or an anytime dessert.

c.       Spread some peach or orange marmalade on top of a slice of the cake and top with whipped cream.
